Easy Copycat Chick-fil-A Wild Turkey Nuggets

With a quick pickle juice brine and homemade Chick-fil-A sauce
Ingredients
Easy Pickle Brine
1 cup dill pickle juice (from jarred dill pickles)
1/2 cup cold water
1 tablespoon sugar
1 lb wild turkey breast, trimmed and cut into 1-1.5 inch chunks
Breading
1 cup all-purpose flour
2 tablespoons powdered sugar
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon baking powder
For Frying
Peanut oil or canola oil (enough for 2–3 inches in a pan)
Copycat Chick-fil-A Sauce
1/2 cup Mayonnaise
2 tablespoons Honey
2 tablespoons Smoky BBQ sauce
1 tablespoon Yellow Mustard
1 tablespoon Dijon Mustard
1 teaspoon Lemon Juice
Recipe Directions
Brine the Turkey
- In a bowl or zip-top bag, mix 1 cup pickle juice with cold water and sugar.
- Add turkey nuggets and refrigerate for 2 to 4 hours.
- Remove from brine, rinse briefly, and pat dry thoroughly with paper towels.
Prepare the Breading
- In a shallow bowl, combine flour, powdered sugar, salt, paprika, pepper, garlic powder, and baking powder.
- Dredge each turkey piece in the flour mixture, pressing to coat well.
- Set aside on a wire rack and let rest for 10–15 minutes before frying.
Make the Chick-fil-A Sauce
- Whisk together mayonnaise, honey, BBQ sauce, both mustards, and lemon juice until smooth.
- Refrigerate until ready to serve.
Fry
- Heat oil in a heavy pan to 350°F.
- Fry nuggets in small batches for 3–5 minutes, until golden brown and the internal temp reaches 165°F.
- Transfer to a paper towel–lined plate or wire rack to drain. Serve warm with copycat chik fil a sauce on the side.
